Potato Candy

I relatively successfully produced potato candy tonight! And it was much more successful than that time, so maybe I can have my Irish heritage membership card back now. Since my potato-candy-making attempt failed so utterly miserably back then, today was the first time I'd dared to attempt it again since that entry two years ago. Wait . . . *blinks and stares* . . . Exactly two years ago, to the day! I swear I didn't plan that. I had no idea whatsoever. There must be something about January 29th that inherently makes me want to produce potato candy.

I've decided that the secret to getting the dough to solidify is to put the potato in the refrigerator after it's done overcooking, and not start making dough with it until it feels cold when you touch it. Because if the potato is too warm, it melts the sugar into liquid, and then all you get is liquid instead of dough.

And how does that taste?

That's the most um... original thing I have ever heard about since I was in the most varied ice-cream shop in Merida, a city in Venezuela(where they have clavours like meat ice cream, black bean ice cream and other curiosities.)
